Born in France to Calabrian parents, Anthony’s culinary career has taken him to many different continents. As a young chef he spent time in Japan and Malaysia before taking up the role of Head Chef at the restaurant Rossellinis on the Amalfi Coast, Italy, where he was awarded his first Michelin star. In 2003, Anthony opened II Pagliaccio, Rome, where he brings Italian fine dining into a new era with subtle Asian influences. As a result, in just 3 years he received his second Michelin Star.
Inspired by Anthony’s travels around Asia, but firmly grounded in his southern Italian heritage, the menu is a celebration of the finest produce and ingredients. Chef Anthony takes inspiration from his southern Italian heritage whilst embracing his experiences to develop his own unique contemporary Italian cuisine. The Ritz-Carlton, Hong Kong is grateful for this opportunity to bring the delights of Chef Anthony to the Pearl of the Orient.
