Carus Vini is a young small Chianti Classico estate in S. Casciano val di Pesa (Florence) with 26 hectares, of which 13.5 of vineyards. The primary varietal are the 8,5 Sangiovese hectares that have been qualified to produce Chianti Classico; the rest is Merlot, Cabernet Sauvignon and Shyraz.
We produce wine with the minimum possible environmental impact without losing the target to produce the best product and respecting the tradition.
Our Farm follows the guidelines dictated by Integral Agriculture that respect the vineyard and man (starting from 2018 vintage we are certified as an Organic Farm under European Law). We refrain from using chemical products and we use nitro-sating crops between the vineyard rows.
We are currently exporting regularly to USA (Boston, California), China, Japan and UK.
At the moment our total production is 40.000 bottles per annum but we are looking to enlarge this quantity, always preserving high quality.

Our wines mature partly in wood. We use either Barrique or Tonneau for a 6 to 18 months period.
