Carus Vini

Carus Vini farm consists in 26 hectares of which 13,5 dedicated to wine production and 4,5 to olive oil. It is situated in the heart of Chianti Classico between San Casciano in val di Pesa and Mercatale, one of the best location to produce this excellent wine. The vineyards are on calcareous clay hillsides, at elevation of 300m above sea level. The primary varietal are the 8,5 Sangiovese hectares that have been qualified to produce Chianti Classico, the rest is Merlot, Cabernet Sauvignon and Shiraz. These vine types are cultivated either a cordon or “Guyot” with a density of 3.500 – 5.000 plants per hectare according to vine type and the area. The different exposure of our vineyards allows to produce grapes with a high organic complexity, a necessary precondition to obtain excellent wines. Guido Carissimo, the owner, aims at perfect balance between vegetative growth and productivity and, to this purpose, the vineyards are carefully tended until the harvest, which is done by hand into small baskets, and is carried out in different phases to guarantee that the grapes are picked only when they are perfectly ripe. In the cellars, Guido consulting the winemaker Gioia Cresti, do their utmost to maintain the quality of the grapes, combining traditional techniques with some modern technologies. The cellar has a dozen steel vats with controlled temperature, both in the traditional cylinder form and in the conical form. They are all in small dimension to optimize the wine management keeping wine type and source separated. Our wines aged both in our steel vats and in our French oak barrels. Carus Vini is a boutique winery located in the heart of Chianti Classico area. Passion for wine has always accompanied the history of Carissimo family that run in the wine business from four generations.

Guido Carissimo, enchanted by the wonderful valley of Terzona, decided to start his new adventure in Tuscany producing organic wines.

Guido bought Carus Vini estate in 2011 with the aim to give the best interpretation both Tuscan terroir and Chianti Classico. His first harvest was in 2012.

The most important goal of Guido is to produce wine with the minimum possible environmental impact . We adopt modern technologies investing in research and innovation, withouth losing the target to produce high quality wines. In our cellar we installed photovoltaic panels for electricity and hot water, we made our walls and roofs ventilated and installed an energy saving heat pump to stabilize wine temperature. In our vineyard we are experimenting Systemic Acquired Resistance (SAR) to further reduce copper usage : these natural substances strengthen the immune system of the plants and its reactivity to diseases. We purchased also a Meteo Station to reduce spraying.

Our products range consists in two types of Chianti Classico - annata and Gran Selezione - and three different kind of Supertuscan produced with pure Syrah, Merlot and Cabernet Sauvignon. Our wines mature partly in wood. We use either barrique or tonneau for a 9 to 18 months period.
